I made Japchae three times a year, and I developed my own recipe.

1. [Stir-fry] the food ingredients separately and mix them at the end.

2. Order of stir-frying ingredients

- First, stir-fry the meat marinated in garlic and pepper.
I use a stainless steel pan, and after stir-frying the meat, [nurungji] forms at the bottom.
Use this to stir-fry the onions.
And then stir-fry the [carrots].
Finally, add the shiitake mushrooms, and the frying pan will be clean.
Mushrooms should be prepared in larger quantities than you think. This is because they shrink a lot when heated.

* All ingredients should be taken out when they are slightly mushy.

3. Seasoning
[Japchae] combines the food ingredients at the end.
Therefore, each individual ingredient must be [seasoned].
Personally, I think [vegetables] and [meat] go best when they are a little salty, and [glass noodles] a little sweet.
