Ingredients: Pasta noodles
Cheese (Grana Padano or Pecorino),
Bacon (Guanciale or Pancetta are best), Salt, Pepper
Per serving
120g noodles 3 eggs 50-60g bacon
Salt Approximately 10g per 1L of water
Add egg yolk, add cheese and stir.
Add black pepper and mix well.
When the water boils, add salt
Cook the noodles 1-2 minutes less than the cooking time stated or until [al dente].
While the noodles are cooking, fry the bacon in another pan to make oil. If the pan is too hot, the sauce will cook, so do this in advance. Cook the bacon and let the pan cool.
Once the noodles are cooked, add them to the pan and mix with the bacon.
And the most important part is adding the sauce.
Make sure the pan is not hot, and that the sauce is evenly distributed and not clumped.
Stir quickly with one hand and pour with the other.
