Strawberry shortcake

I found high-quality strawberries at [Emart Traders] and bought them.

There was a lot of leftover fresh cream from making cheese [cake] last time, and since I wanted to eat [cake].

So I made a strawberry [cake].


(1) Making [Genoise]

( 3) I added [sugar], [honey], and other ingredients to the [eggs], added [vanilla beans], and heated them over a double boiler.

(5) I whisked the [eggs] heated to 45 degrees until they became [pale] and [fluffy].

(6) I added the [dry ingredients (powder)], then added [milk] and [butter] and mixed them together.

( 7) I baked this in the [ microwave ]. (170°C, 30 minutes)

( 8) After letting this [bread] cool slightly, I [wrapped] it and placed it on a [dry cloth] for about 6 hours.

(9) I cut this [bread] into three layers, each about 1.5 cm thick.

( 10) I boiled [sugar syrup] and let it cool, then added about 20 ml of [whiskey] to it.

(11) I prepared the strawberries.

(12) I added 100 g of [mascarpone] and 37 g of [sugar] to 500 g of [fresh cream].

(13) After whipping this to about 60%, I set aside some [whipped cream] separately for [icing].

(14) I brushed syrup onto the [bread].

(15) And then, I spread [cream] over the [bread].

( 16) And then, I placed strawberries on top of the [bread] covered with [cream].

After that, I spread more [cream] on top.

(17) After spreading [cream] well on the [Genoise], stack another [Genoise] layer on top and repeat this process.

(18) After finishing up to this point, brush [syrup] onto this [bread].

And then, I will use [fresh cream] for [icing].

* [Cream] for [icing]: it should be whipped less so that it can be spread smoothly over the [bread].

( 19) Animal-based fresh cream: since the condition of the [cream] can quickly become unstable, you need to do the [icing] quickly.

Plant-based fresh cream: the taste is relatively less rich, but it has better stability.

That is why many bakeries properly mix [plant-based fresh cream] and [animal-based fresh cream] together when using them.

I left this [cake] in the refrigerator for a day as it was.

(21) The rich and fresh milky flavor of the [cream] went well with the moist [cake sheet] and strawberries, so I really enjoyed it.
