Onions are fried in a pan with salt, sugar, and pepper. Mix the dough with levain in a 2:1 ratio of strong flour and all-purpose flour.
Put a lot of onions on the dough
Sprinkle Grana Padano to finish
Bake at 230 degrees for 23 minutes
If you increase the dough and put only mozzarella cheese in the middle, it becomes "Fugazzetta".
The moisture content is different, but...
