Today's Meat
I went to Costco Yangjae branch and bought it.
I cut off all the fat from the meat, so only half of it remained.
I searched on YouTube how to tie meat and tied it nicely.
Spread 4% sugar and 2% salf (of meat's weight) , marinate for 3 hours.
And bake in a 250 degree oven until the temperature of the center of the meat reaches 48 degrees.
I took out the finished meat and kept turning it over and let it rest for about an hour.
(This way, it goes up to medium rare at 56 degrees or more.)
And we need to make a pesto sauce to go with the meat.
You can't use a mixer and you have to use a stone-[mortar].
So I bought a stone-[mortar] from Coupang.
Pepper
Caraway
Salt
Italian parsley
Spearmint
Dill
Rosemary
Wholegrain mustard
Garlic
Walnuts
Honey
Water
Olive oil
I ground the ingredients in the above order and made pesto sauce.
I also bought a bunch of spinach
And I made [creamed spinach]
And on top of [Kaimak], I put salmon (wrapped in kelp and aged)
Slice the salmon and sprinkle with [lemon zest].

I cut the meat with a meat slicer.
The meat was sliced really thinly.
