

(1) Today, I made and ate a three-course meal with three appetizers for [white wine].




(2) Salmon Toast
Prepare pre-cut [toast bread], lemon, and salmon cured with [grapefruit zest], sugar, and salt.
Sauce: Wasabi mayonnaise
[Jelly] on top: Grapefruit whiskey jelly
It's a little too big to eat in one bite, but I think the balance is best and the satisfaction is greatest when you eat it all in one bite.





(3) Beef Carpaccio
A dish made by lightly searing only the surface of fresh beef, slicing it thinly, flattening it with a rolling pin, and seasoning it with vegetables, [nuts], [cheese], [black pepper], salt, and [olive oil].



(4) A salmon dish made using the recipe of chef [Eric Ripert] from the New York restaurant [Le Bernardin]
A dish prepared using a method in which salmon is slowly cooked in a butter emulsion.
Since it was an unfamiliar cooking technique, I made it with some skepticism.
Sauce: Coconut milk + curry
This dish paired extremely well with [cauliflower] and [zucchini].
The texture of the salmon was surprisingly good.
It was the most delicious dish I ate today.
(5) Cooking process


(6) Grapefruit + lemon zest

(7) I cut the [grapefruit] in half.

(8) Then, I squeezed the juice from the [grapefruit].




(9) I added [agar] and made [jelly].

(10) Fruit zest + sugar + salt
You need to rinse this with water before using it in cooking later.

(11) Walnuts: I Roasted them in the oven



(12) Meat: I quickly seared only the surface in a hot pan, then immediately put it in the freezer to prevent it from cooking further.

(14) Cucumber: I sliced it so thin that it was almost transparent.
