At the time, this restaurant was located near Sinsa Station (when it hadn't been open for very long yet). I visited this restaurant for lunch.
The restaurant was bar-style, with curtains drawn like a theater stage.
When it was time to dine, the curtains would rise, and the [Kalmakase] chef and assistant chefs would be standing there.
(They said the concept was to stage the cooking process like a theatrical performance.)
This restaurant was a classic [omakase], creating its menu based on the best ingredients of the day.
The quality of the ingredients was excellent.
Because the [Kalmakase] chef had studied [sake] extensively, they created a separate [Sake pairing] menu, carefully matching [sake] that paired well with the food.
I really enjoyed the food here, and afterwards I visited several times for dinner as well.
There was a great selection of good [sake], and the food was delicious.
